I LOVE QUESO! I love it so much. So, I decided to try to make it at home! Here’s how my first try went!
Ingredients:
1 lb. White American cheese, grated
1 lb. Yellow American cheese, grated
1 Tbsp Butter
2 jalapenos, diced and seeded (if you want more spice, keep the seeds)
1/2 Medium Onion, diced
2 Garlic cloves, rough chop
2 Small tomatoes, diced
1/4 c. Cilantro, rough chop
2 Tbsp cornstarch
1 1/2 c. half and half
1 tsp Carlic powder
1/2 tsp Cumin powder
1 tsp Salt
1/2 tsp Pepper
1/2 c. water, optional (to thin out to your desired consistency)
Directions:
1. In a pot on medium heat, add in the butter. Once it’s melted, add in the jalapenos, onions, and salt. Saute for 5 minutes or until softened. Add in garlic and tomatoes. cook for another 5 minutes.
2. In a small bowl, add your cornstarch and half and half. Whisk together and get out the clumps. Add that mixture into the pot and stir.
3. It will immediately start to thicken (because of the cornstarch). Stir in both of the shredded cheeses. As it melts, you can add in a little bit of water if you want a thinner consistency.
4. Finish adding in the rest of the seasonings and the cilantro. Stir them in well and serve with tortilla chips of course!
