We are on part 2 of this fish dinner. Orzo! It’s like rice shaped pasta!
1 c. dry orzo
2 garlic cloves, minced
1 1/2 c. chopped spinach
1/2 tsp lemon zest
1 tsp fresh lemon juice
TT salt and pepper
1. Boil water for the orzo. Once it’s roaring, add in salt and then the pasta. Boil for about 8 minutes.
2. Strain the orzo and set aside. In the same pot, add in a bit of olive oil and saute the garlic and spinach. Once the spinach has wilted, add in the orzo, lemon zest and lemon juice and stir well.
3. Taste to adjust your salt and pepper. And there you have a simple and delicious pasta side dish!
